Owners andĀ Chez Panisse alums Aaron and Monica Rocchino opened the artisanĀ butcher shop in the Gourmet Ghetto neighborhood of Berkeley. Their business centers on old-fashioned, one-on-one customer service and focusing on whole animal, sustainable raising methods and informed, responsible butchery. From Berkeleyside: “The shop has been designed to look spotless and airy with an emphasis on transparency ā butchers cut meat in full view of the customers, thereās a large viewing window on the meat cooler, and all the meat is displayed with chalk-board signs in front-facing cases. āNobody is going to turn their back on you while cutting or packing your meat,ā says Monica.”
